hari raya..
it has been a while since i get to rite in this blog due to the busy period and a long holiday( i am working day and nite by the way) so i take this oppurtinity to wish u guys out there a selamat hari raya and maaf zahir batin for the "TER" that i have done since i know you guys..this sunday may be the first day i am going for a raya at a colleague house ,pity me : (..with all the rendang,ketupat,lemang and all sort of things that associated with hari raya i will taste it 4 the first time this sunday at house not at the hotel and i really hope that his wife is gud cook..some of my friend are truly a gud friends cause eventough that i am working but still they have a time to tapau something for me from their house and i wish thank you and god bless you girl but a few of them lost their loves one during this period..i know one pastry chef that lost her husband on the third day of raya due to heart attack when sleeping,she tried to woke him up the next morning but the body are cold and blue..we when to visit her this morning and the feeling are quite moody for her son this hari raya and may be this long awaited day will not be the same again for him but i just tell myself that after a month of puasa and 3 full days of asking forgiveness from all the people that he knew,he must very lucky to have pass away in his sleep without pain and without a sin in his name..they told me that it was a high blood pressure that stop his heart cause when you take to much sweet and may be lamb or beef the neck will feel some pain and the artery will push the blood vessel to the wall creating pressure to the heart..so my friend please eat wisely during this holiday,dont eat with lust cause its going to harm you in long term,just take a little bit at a time cause you know that the food will not finished..Selamat Hari Raya my friends, hope to c u next time..

rice anyone?
Italian rice aka risotto are the most complex of rice that i ever cook..it has the taste like our "pulut" but are more sticky if you know how to do it..most of our european friend prefer this type of rice cause its really hard to get like our rice except in the Vietnamese or indian sundry shop but it will cost you a fortune..when i was in Tunisia we have to import our brand rice in the restaurant from France or ordered it through our friend here in Malaysia to bring it for us..and that my friend will cost you time and money but hey!!! when there's a will there's a way..right??So risotto rice are quite new to our society except in major hotel or restaurant that served italian cuisine..It will blend well if we have a whisky or wine dinner(please to take it with white wine cause the red wine have a strong flavour that will kill the risotto taste..I love risotto with mushroom and parmesan cheese blend together with goat cheese when serving..The flavour of mushroom and cheese will melt in your mouth when you chew it..So today for those of you who haven't got the chance to taste it this is what we gonna do...All you need is: Risotto Rice(you can buy it at cold storage or other major store but not at carrefour or giant),dice onion(2oogm),garlic(2cloves),button mushroom(i love this mushroom),chicken stock liquid not the cube that we have( just boil some water,chic bone and some onion,carrot and celery for sweetness,boil everything in the pot),butter(100gm),grated parmesan cheese and goat cheese..THE METHOD: Take a pan or a pot depending of the volume that you gonna cook,heat it up,butter and saute the dice onion and garlic,and if u gonna put some vege like mushroom this is the time to put it..saute it slowly until it turn brown and put your risotto rice..you will hear the crack sound as the rice will absurd the garlic and onion flavour that you have saute a bit earlier..then pour your chicken stock or if you a vegetarian just do the vege stock,just like the chic stock except do not put the bone inside it just the vege..do not flood the rice with the stock just a little bit at a time but please my friend do not leave it un-attended cause it will get burn very easily..stir it slowly and you can see the liquid been absurd by the rice..It should be done less then 10 min..pour it onto the plate and put your parmesan and goat cheese on top and WAAA LAAAA you just got a mushroom with cheese risotto..happy cooking..

salad anyone..
to most american and the european salad are the entree(pronounce it as a ON TRAY) before you have your dinner..be it at home,function or party..for us some of our kids doesnt eat a lot of vege but they take a lot of poultry or meat..so here today we gonna make us some salad for our dinner at home and may be just may be the kids and the family will love it..the salad we gonna make today is arguably the most popular the italian have export to around the world and is called the CEASAR SALAD..there are a lot of story from where the salad have been made and of them is a man called Cardini that invented the salad from his depleted kitchen supplies on the fourth of July and he just do with whatever he has..history aside and lets make some salad,shall we..for Caesar salad dressing all we need is some egg yolk,olive oil(please dont use the normal oil,it will taste blunt),anchovies in can,tobasco,lemon juice and some garlic..some recipe will ask you to put some Worcestershire sauce but for me the tabasco are just fine..take a bowl and clean it.just make sure there are no liquid inside it..put the egg yolk inside(3 egg yolk 4 150ml of olive oil)whisk it and slowly put in olive oil and whisk it properly,just be gentle with the whisk cause if you put the olive oil to fast the dressing wil break and you have to do it all over again..whisked it gently until you have the amount of dressing that you needed and put aside..next you need to chopped the anchovies and put it inside the dressing,a little bit of tobasco and lemon juice..stir everything well and refrigerate it..for the salad its better that we use romaine lettuce,wash the salad and cut it for what you need..tossed the salad with dressing but please do it little by little..for the croutons you will need to
Cut a cup or so of good french bread into 1/3 inch dice. Toss around gently in a moderate frying pan with a sprinkle of olive oil and a couple crushed cloves of garlic. Add a couple more drops of olive oil from time to time. After ten or fifteen minutes, when the croutons get crisp and a bit browned around the edges, you can add a couple dots of butter and a dash of garlic salt. Toss around a bit, then reserve the croutons, rub your salad bowl down well with the garlic cloves, and discard the garlic.so there you have it a little salad to get your family for having a great time..

whats 4 dinner in kuantan??
aaahhh..to some of us it is a very difficult question to answer because we are to busy with our work and aaaallllll our enthusiasm have been drain out at our workplace..i must admit that when i went home i am to lazy to cook( give me some break will you),so what do i do??the first thing is "THE PLACE",it is not that Kuantan doesnt have a place to have dinner but i rather go to a place that near my home sweet home..there is one mamak shop at the beserah area called taj that served good tosai and the chutney is out of this world and for tom yam lovers there is always M.S tomyam situated just opposite ikip..u dont have to wait more then 10min for your order to arrive and the best thing is its CHEAP..yes ladies and gentlemen it is cheap,for only rm10 u can eat just like bob says "sampai muntah makan"..but if its everyday occasion you will get this bored feeling cause you have eaten at that place almost daily and sure you want to try something else..right??so the only option that i have in mind is to cooked and 4 me i am very particular with my cooking(i wonder why : )..my favourite is ayam masak kicap cause i cant take chilli at all..u heard me right,i dont take chilli..i really dont know why i cant take chilli cause my mom are a chilli person and my girl ate chilli bird like there is no 2morrow,i tried to eat some but my head will get ssssooo itchy and i will drink a lot,so when i finish my meal my belly will have 5 litre of water so the solution is dont take chilli..ayam masak kicap is the simple dish that u can do at home..all you need is some chicken(with bone please),ginger,garlic,soy sauce and stock and for vege i simply use some u.s lettuce or iceberg that u can bought at supermarket,shred it with your hand(please do not use knife) and some slice garlic and wwwaaalllaaa some nice meal 4 your dinner and it doesnt have much ajinomoto(seriusly,i dont use ajinomoto 4 my cooking)..is that simple..so my freinds it is not a hard work to cook a decent meal at home for yourself or your family,it just take a little while to do the mis en place(preparation that is) but trust me your family will appreciat it 4 the rest of their life.. bon appetit..
